No one can be told what oca is, you have to see and taste it for yourself (read the story of our oca here).
The best way to experience oca is to lightly oil, salt, and roast at 400F for 45-50 minutes, or until fork tender and skin is brown. 1lb of oca takes about 50 minutes. Otherwise, treat as you would potatoes, sunchokes, or even jicama. Oca fries and pickled oca are particularly rewarding.
